Technical Principles
Both citric acid and malic acid act as preservatives through several pathways:
- Reduction in pH: Decreasing the pH level of food substances makes it more difficult for bacteria, yeast, and molds to thrive.
- Chelation of Metal Ions: Both acids inhibit microbial activity by way of bounding to vital metal ions such as iron and calcium, which are critical to microbial enzymes and, thereby, disrupting catalytic and metabolic pathways.
- Membrane Disruption: Undissociated acid molecules penetrate microbial cell membranes and acidify the cytoplasm resulting in cell death.
- Synergistic Effects: When combined with other natural antimicrobials (e.g., plant extracts, bacteriocins), these acids enhance preservative efficacy through multi-target action.
