Lysozyme Preservative

Chemical preservatives raise health concerns, driving demand for alternatives. Lysozyme (LYZ), a natural antibacterial enzyme present in human and animal tissues, offers an effective substitute. CD BioSustainable provides lysozyme R&D services—from design and efficacy optimization to large-scale production—integrating enzymology, nanotechnology, and food science to address microbial issues in food matrices.

Technical Principles

Lysozyme inhibits bacterial growth through cell wall lysis via peptidoglycan hydrolysis which results in the hydrolytic breakdown of β-1,4 glycosidic bonds found in peptidoglycan. Osmotic lysis occurs in bacterial cells, ribosomes subsequently perish. The enhanced strategies in our formulation are designed to widen the effectiveness of preservatives.

  • Synergistic Combinations: Blending lysozyme with chelating agents or penetration enhancers to aide penetration into Gram negative bacterial centers.
  • Nanoencapsulation: The use of lipid carriers or peptide functionalized nanoparticles to guard lysozyme from denaturation and enable modification of release control.
  • Modifications of pH and Thermal Stabilities: Replacement of the stabilizers or variant lysozyme enzymes engineered to preserve the enzyme's activity during various processing steps.

Technology Classification

  • Pure Lysozyme Formulations: Ideal for minimally processed foods requiring mild preservation.
  • Hybrid Systems: Lysozyme combined with organic acids, plant extracts, or nanotechnology-enhanced carriers for synergistic effects.
  • Smart Delivery Platforms: pH-responsive or temperature-triggered release mechanisms using biopolymer matrices.

Application Areas

  • Dairy products: Inhibition of spoilage bacteria in fermented milk and cheeses.
  • Meat and poultry: Salmonella and e coli control for extended shelf life.
  • Seafood: Preservation of fresh and processed fish products by control of microbial proliferation.
  • Beverages: Non thermal preservation of functional drinks and natural juices.
  • Bakery items: Mold and bacillus spp. control in bread and pastry.
