In an effort to protect food while ensuring quality and safety, preservatives like chemicals have raised concerns due to several health impacts. This has created a need for more environmentally friendly chemicals/alternatives. Lysozyme, a naturally occurring enzyme that has powerful anti-microbial properties, has proven to be a great alternative to traditional preservatives. Lysozyme (LYZ) is found in various human and animal tissues and is responsible for fighting off infections through its immune responses. Lysozyme is known to be effective against many types of bacteria. The food industry is shifting towards offering clean-label eco-friendly products to stay relevant, and this has made the use of traditional preservatives like sulfites and benzoates face scrutiny. It is for this reason that our company has devoted itself to creating customized lysozyme-based preservative systems for the food industry using biotechnology to help make food safer and at the same time, friendly for the environment.

We provide preservative development services starting from formulating the initial lysozyme design to optimizing and testing its potency and creating advanced molds for mass production. Our team collaborates transcending fields with mastery of enzymology, Nanotech, and food science to respond to various microbial issues that may arise in food matrices. This allows us to formulate specific preservative systems enhancing Lysozyme with synergistic anti-microbial partners, advanced delivery systems and improved stability to achieve a wider range of activity, adaptable to processing conditions without losing quality.
Technical Principles
Lysozyme inhibits bacterial growth through cell wall lysis via peptidoglycan hydrolysis which results in the hydrolytic breakdown of β-1,4 glycosidic bonds found in peptidoglycan. Osmotic lysis occurs in bacterial cells, ribosomes subsequently perish. The enhanced strategies in our formulation are designed to widen the effectiveness of preservatives.
- Synergistic Combinations: Blending lysozyme with chelating agents or penetration enhancers to aide penetration into Gram negative bacterial centers.
- Nanoencapsulation: The use of lipid carriers or peptide functionalized nanoparticles to guard lysozyme from denaturation and enable modification of release control.
- Modifications of pH and Thermal Stabilities: Replacement of the stabilizers or variant lysozyme enzymes engineered to preserve the enzyme's activity during various processing steps.
Technology Classification
- Pure Lysozyme Formulations: Ideal for minimally processed foods requiring mild preservation.
- Hybrid Systems: Lysozyme combined with organic acids, plant extracts, or nanotechnology-enhanced carriers for synergistic effects.
- Smart Delivery Platforms: pH-responsive or temperature-triggered release mechanisms using biopolymer matrices.
Application Areas
- Dairy products: Inhibition of spoilage bacteria in fermented milk and cheeses.
- Meat and poultry: Salmonella and e coli control for extended shelf life.
- Seafood: Preservation of fresh and processed fish products by control of microbial proliferation.
- Beverages: Non thermal preservation of functional drinks and natural juices.
- Bakery items: Mold and bacillus spp. control in bread and pastry.
Environmental Benefits
- Reduced Chemical Runoff: Unlike synthetic preservatives, lysozyme degrades naturally, minimizing aquatic toxicity.
- Energy Efficiency: Lower processing temperatures required compared to chemical sterilization methods.
- Sustainable Sourcing: Lysozyme can be derived from upcycled egg white byproducts, promoting resource efficiency.
